Description
Schijn is a strong aromatic beer full of tension and power, yet also with balance and elegance. The high concentration of fruit provides high acidity and firm tannins.
The basil counterbalances the fruit and pops out of the glass. Several types of plums from different local growers were used for this beer. Parts of this beer has macerated on fresh, whole plums, including the pit. In this way, you get the full essence of plum. The basil that has been added comes from the Ommuurde tuin and has release its flavour for a full week. We used different varieties of basil, but mainly the ‘Al Genovese’ and the ‘Tulsi’, or ‘holy basil’. Schijn has aged on oaks for an average of 10 months, but is in fact much older. Almost all the barrels in the blend have macerated on plums for 3 to 9 months.
