Zwam is our collab with brewers Rudy en Marc from De Natte Gijt. The collab was founded because Rudy is an real mushroom connoisseur and collector and we have always wanted to brew with mushrooms. On an autumn day on October 11, 2018 we gathered at Nevel and Rudy brought a mixture of different fungi and boletus (giant fungus, witch bolete, porcini mushrooms, umbrella fungus and sulfur fungus).
These mushrooms have been cooked along during the end of the cooking process to release their flavor. The dark base beer gives nicely complementary flavors of toasted bread and caramel. This beer has aged on oaks for 19 months. The barrel aging has brought all flavors together. Mushroom is a sour dark beer, with lots of savory umami notes from the mushrooms. Yet Zwam is surprisingly fresh with fruity notes due to the long ripening. Autumn in your glas! Ideally suited to drink with a rich mushroom stove or in front of the fireplace after a day of mushroom hunting.
